- 7 ounces white beans (such as cannellini, rinsed and drained)
- 3 tablespoons chopped fresh flat-leaf or curly parsley
- Freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 2 teaspoons Dijon mustard
- 1/2 shallot (minced)
- 1/8 teaspoon kosher salt
- 1/4 cup olive oil
