Vegan Salted Bourbon Caramel Ice Cream

  • 1 1/2 cups raw cashews ((soaked overnight // or for at least 6 hours // then drained))
  • 1 cup bourbon ((we used Trader Joe's brand because it's made by Maker's Mark - good stuff!))
  • 1/2 cup organic cane sugar ((or granulated))
  • 4 Tbsp unsweetened plant milk ((I used almond))
  • 1/4 tsp sea salt
  • 1 14-ounce can full-fat coconut milk
  • 3 Tbsp coconut oil ((melted))
  • 1 tsp pure vanilla extract
  • 1/4 cup agave nectar
  • 1 Tbsp tapioca flour OR arrowroot starch ((optional // for thickening))
