- 3 teaspoons ground annatto/achiote
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 cup vegetable or canola oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 1/4 cup white vinegar or apple cider vinegar
- 2 cups water
- 2 medium potatoes, peeled and diced into 1/2" cubes
- 2 cups cut frozen green beans
- 1 (15 oz) can baby corn, sliced into 1/2" pieces
