Caribbean Rum Pineapple Banana Bread Cups

  • 2 whole Overripe Bananas (Mashed)
  • 1/2 cup Fresh Pineapple or Candied Pineapple (I used Paradise Co. Holiday Fruit Tropical Pineapple )
  • 1/4 cup Caribbean Rum (For rum-soaked pineapple)
  • 3/4 cup Brown Sugar (packed)
  • 1 large Egg
  • 11/2 cups All Purpose Flour
  • 1/4 cup Melted Butter (unsalted)
  • 1 tsp Baking Soda
  • 1/4 cup Salted Roasted Cashews (Optional) (chopped)
  • 1/2 tsp Salt
  • 1 container Coconut Whipped Cream (I used So Delicious Coco Whip)
  • 4 to 6 tbsp Toasted Coconut Flakes (For topping off, if desired)
