Caramelized Peach and Oat Pancakes

Utensils needed:
- 2/3 cup plain yogurt
- 2 tablespoons butter or coconut oil, melted
- 1 tablespoon lemon juice (about 1 small lemon, juiced)
- 1 tablespoon honey or maple syrup
- 2 teaspoons vanilla extract
- 2 eggs
- 1 cup oat flour*
- 1/2 teaspoon baking soda
- Slightly heaping 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1 peach, halved, pitted and very thinly sliced (into about 1/8-inch slices)
