Buffalo Chicken Enchiladas

  • 10 corn tortillas (about 5 1/2 inches across)
  • 3 cups chicken (cooked and shredded - I use one whole Rotisserie chicken)
  • 8 oz cream cheese (softened)
  • 2 tbsp buffalo sauce
  • 2 tbsp salsa verde
  • 1 oz Ranch dressing mix
  • 1/2 cup blue cheese (divided)
  • 2 tbsp cilantro (divided)
  • 1/2 cup buffalo sauce
  • 1/2 cup salsa verde
  • 1/3 cup Ranch dressing (I use Litehouse brand)
  • 1 1/2 cups Monterey Jack cheese (shredded)
  • 3 tbsp unsalted butter (melted)
  • tomatoes and celery for garnish (chopped)
