Brilliant Beet Black Bean Dip

- 1 15- oz can unsalted black beans (drained and rinsed)
- 1 cooked red beet (peeled and diced, about 1/2 - 3/4 cup)
- 1 clove garlic (chopped)
- 1 tbsp balsamic vinegar.
- 1 tbsp light miso paste
- 1 tsp cumin powder
- 1 tsp jalepeño pepper (finely diced or 1 dry Bird's Eye Chili, crushed (optional))
- 1/2 tsp black pepper (freshly ground)
- 1/4 cup parsley (chopped (or other fresh herbs--cilantro, dill, mint, basil, etc))
- 2 tbsp extra virgin olive oil
- Sea salt to taste
