- 23 ounces Diced Tomatoes, drained
- 1 Lime, juiced
- 1 cup Fresh Cilantro leaves
- 1/2 cup Unsweetened coconut milk
- 4 Cups Chicken stock or Chicken broth
- 1 bay leaf
- 2 Tablespoons Cornstarch
- 1/2 Cup cold Water
