- 4 cups corn (about 5-6 ears)
- 4 cups chicken broth
- 1 pound Applewood smoked bacon (diced)
- 1 ⅓ cups heavy cream
- 4 tablespoons butter
- 9 celery stalks with leaves (finely chopped)
- 2 red bell peppers (finely chopped)
- 3 medium russet potatoes (peeled and diced in ⅓ inch cubes)
- 1 large yellow onion (finely chopped)
- 2 large garlic cloves (minced)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt & pepper (to taste)
