Best Campfire Stew - Sausage and Bean Casserole

  • 1 L beef stock (33floz)
  • 600 g baked beans (21oz (1 big tin, or two small tins), use ham sauce or bbq sauce for extra flavour)
  • 1 onion (chopped)
  • 1 celery stalk (chopped)
  • 2 carrots (chopped)
  • 3 potatoes (medium size, chopped)
  • 2-4 slices bacon (chopped)
  • 6 sausages (cooked and chopped - leftover bbq sausages work great)
  • 5 mushrooms (chopped)
  • 400 g diced tomatoes (14oz (1 tin))
  • 2 cloves garlic
  • 1 tbsp vegetable oil
  • 2 tbsp cornstarch / cornflour (or flour dissolved in 2-3 tbsp COLD water, to thicken stew)
  • Salt and pepper (to taste)
