Best Campfire Stew - Sausage and Bean Casserole

- 1 L beef stock (33floz)
- 600 g baked beans (21oz (1 big tin, or two small tins), use ham sauce or bbq sauce for extra flavour)
- 1 onion (chopped)
- 1 celery stalk (chopped)
- 2 carrots (chopped)
- 3 potatoes (medium size, chopped)
- 2-4 slices bacon (chopped)
- 6 sausages (cooked and chopped - leftover bbq sausages work great)
- 5 mushrooms (chopped)
- 400 g diced tomatoes (14oz (1 tin))
- 2 cloves garlic
- 1 tbsp vegetable oil
- 2 tbsp cornstarch / cornflour (or flour dissolved in 2-3 tbsp COLD water, to thicken stew)
- Salt and pepper (to taste)
