- 4 cups short grain rice (you will only need 1/3 of this recipe or 4 cups of cooked rice)
- 4 1/2 cups water
- 1 3-inch square piece of kombu
- 1/2 cup rice wine vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- 1 cup water
- 1/4 cup rice vinegar
- 8 thin slices roast beef
- 1 teaspoon chili powder
- 4 cloves garlic, mashed to a paste
- 4 cups sushi rice
- 2–3 limes
- 2 teaspoon cumin seeds
- 2 jalapenos, cut into thin strips
- 2 scallions, cut into thin strips
- 8 sprigs cilantro
- 1/2 cup cotija cheese crumbles, or feta
- Pico de gallo or salsa, for serving
