Artichoke salad with watercress, almonds and lemon mustard vinaigrette

Utensils needed:
- 1 1/2 cups chickpeas
- 1 1/2 cups marinated artichoke hearts
- 1 small Lebanese cucumber
- 3 spring onions
- 2 cups watercress or your favourite salad greens
- 1/3 cup flaked almonds (lightly toasted)
- 1/2 tsp dijon mustard
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- salt and pepper (to taste)
