  • 3 spring onions
  • 2 cups watercress or your favourite salad greens
  • 1/3 cup flaked almonds (lightly toasted)
  • 1/2 tsp dijon mustard
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • salt and pepper (to taste)
