- 2 medium eggplants
- salt
- 3/4 cup olive oil (divided)
- 1 large onion (sliced thin)
- pinch of red pepper flakes (optional)
- 1 large ripe tomato (chopped)
- 1 tablespoon tomato paste
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon black pepper
- 1/4 cup water
- Chopped fresh cilantro ( for garnish)
- 1 cup plain yogurt (Greek style)
- 3 cloves garlic
- Salt to taste
