Afghan Roasted Eggplant (Borani Banjan)

  • 2 medium eggplants
  • salt
  • 3/4 cup olive oil (divided)
  • 1 large onion (sliced thin)
  • pinch of red pepper flakes (optional)
  • 1 large ripe tomato (chopped)
  • 1 tablespoon tomato paste
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon black pepper
  • 1/4 cup water
  • Chopped fresh cilantro ( for garnish)
  • 1 cup plain yogurt (Greek style)
  • 3 cloves garlic
  • Salt to taste
